Christmas Nut Mix

Hello everyone, hope you are enjoying this last busy weekend before Christmas.  We went to the mall yesterday and to see some lights and it was fun...the lights part!! the mall, not so much...I don't like crowds and pushing the stroller through that with a cranky little boy who just wanted to go home didn't add up to a great time.  But, we had dinner at Red Robin which is always a treat!

I have a recipe for a nut mix that is sooo simple and sooo good that I wanted to share it with you all.

Here is how you make it...you'll need...

One 14 oz. container of unsalted nuts, peanuts, cashews, both work well. 
2 egg whites
1/2 cup sugar
2 teaspoons of chili powder
1/2 teaspoon of salt
1/4 teaspoon of cayenne pepper
m & m's candies
PARCHMENT PAPER-THIS IS IN SHOUTY CAPS BECAUSE IT'S IMPERATIVE...:)  This mixture will stick to your pan like no tomorrow and if you try to use a spray like PAM it will burn the mixture, you have to put this on parchment paper to cook it...

Beat the egg white's in a mixer until frothy.  Mix the sugar and spices in a bowl and add to the egg whites.  Stir...after the egg whites and the spices are combined, add the nuts and mix all together well.  Pour the mixture onto the parchment paper and spread out.  Bake in a 300 degree oven for about 30 minutes.  Take out and let cool.  You will then need to peel this off of the parchment paper and place in a bowl.  You'll have to break up the pieces as you are peeling it off the paper.  Add some M & M candies and shake up the bowl to mix in the candies, and you are done.  This mix is so yummy, sweet yet salty and a little bit of spice. My hubby loves it and I make it for his birthday every year.

  2. My hubby just told me that I could probably make it because I'm not doing much between 2.00am - 3.00am. I'm not sure when he thinks I should get some sleep. :-)

  3. Yummy!!! Luckily, we are all done for Christmas, we stayed home today and cleaned the house for our guests on Christmas Eve and Christmas day! :)
